Don’t you just love a meal you can prepare and forget until it’s ready to serve? It’s hard to beat a slow cooker or crockpot for simplifying dinner. I don’t use mine as much in the summer months, but for fall and winter it get’s a work out.
When I was growing up, usually on Sunday’s a couple of times a month, my mom would cook a roast. I don’t remember her ever having a crockpot but she would have loved the convenience.
Today, we are in the kitchen doing a little, easy prep for this pot roast that will slow cook for about eight hours. I may add another side, perhaps some green beans but everything else including the potatoes, carrots, and a few onions for good measure will be ready along with the roast.
Ingredients:
- 2 – 3 pound roast (you can use chuck or shoulder roast)
- 2 tablespoons canola or olive oil
- 2 teaspoons Kosher salt
- 1 teaspoon coarse ground black pepper or lemon pepper
- 1 teaspoon dried thyme
- 1/2 cup carrots peeled and cut into 2″ chunks or whole baby carrots
- 3 – 4 potatoes cut into large chunks (you can use Yukon Gold, russet, or red potatoes)
- 1/2 onion cut in chunks
- 2 cloves garlic minced
- 2 cups beef broth or enough to cover the vegetables
- 2 tablespoons corn starch
- splash of Kitchen Bouquet
Directions:
- Season the roast with salt, pepper, and thyme on both sides.
- Heat oil in cast iron skillet until it begins to ripple.
- Add the roast and brown on each side for about 4 to 5 minutes. (this step is a must)
- In the slow cooker add carrots, potatoes, garlic, and onions.
- Lay the beef on top of veggies. Add the beef broth.
- Cover and cook on slow for 8 hours or high for 5 – 6 hours.
- You can either mix well and add the cornstarch, water, and Kitchen bouquet directly to the slow cooker in the last 1/2 hour or remove the liquid, add the ingredients to make the gravy in a small saucepan. Cook until thickened.
- Pour the gravy over roast and vegetables to serve. Can be garnished with parsley if desired.
