Rustic Cabin Bar and Grill closer to opening in Clarkesville

Rustic Cabin Bar and Grill, planned in a 5,500-square-foot building that was formerly Hawg Wild BBQ off SR 385 in Clarkesville, has moved closer to opening after a city council meeting Monday, April 7.

During the meeting, Clarkesville City Council unanimously approved an alcohol license for the future establishment, which is slated to open its doors in July.

“I’m excited about it,” co-owner Carlos Hernandez said Wednesday. “We got all the paperwork put in. We’re very excited.”

Carlos Hernandez is opening the new restaurant alongside his brother, Rudy. Together, the two brothers currently own Chicago’s Pizza in Demorest. Down the road, the Hernandez brothers expect the new establishment to create between 25 to 30 new jobs.

Still, more work must be done before opening day.

“We’re trying to bring that place back to life,” Carlos Hernandez said. “There’s still a lot to do, but I’d say we’re about 80% done.”

Carlos Hernandez said he anticipates a soft opening at first, just to get a feel for the pace of operation and to ensure everything runs smooth.

Rustic Cabin will offer a full bar, with the bar area separate from the general dining space to maintain the family-friendly environment. The menu will feature a variety of options, including bar food, steaks, burgers, wings, sandwiches, pastas, vegetarian choices and specialty hors d’oeuvres.
