I’ve bragged about my husband’s culinary skills on many occasions. Do you think if I continue he’ll keep being the Master Chef on his days off from work? I sure hope so. I’m a good southern cook but he can whip up anything from Chinese to Mexican and any cuisine in between. He makes the best ribs and seafood dishes I’ve ever tasted. I would put this pasta salad right up there in my top favorites.
Who wants to heat up the kitchen in the summer? Not us. Who likes to keep things simple, cool, and refreshing when temperatures are just shy of Hell’s kitchen? We do!
This is one of our favorites this time of year. The recipe features some fresh summertime fare. It would be great to take on a picnic, to make for lunch, or add some grilled chicken and you’ve got a great dinner.
Ingredients:
- 1 12 oz. package of Tri-color rotini pasta
- 1/2 cucumber finely diced
- 1 medium tomato diced
- 1/4 cup diced celery
- 1/4 cup chopped mild banana peppers
- 1/4 cup diced red onion
- 1/4 cup dill pickle relish
- 1 tsp hot sauce
- 5 Tbls olive oil
- 2 Tbls red wine vinegar
Directions:
-Cook pasta, drain and let cool
-add all remaining ingredients in a large mixing bowl
-mix well with pasta
-cover and put in refrigerator to chill
