King ranch crunch chicken casserole

We love chicken dishes, Mexican food, and casseroles. I found this all-in-one recipe and had to give it a try. Let’s face it, casseroles are a blessing. Unless you are feeding a large family, there are always leftovers. I’d say that is a bonus!

For some reason, when I saw the word “ranch” in the name of the recipe, I fully expected it to include Ranch dressing. It does not, but apparently it’s very popular based on the reviews and comments. It’s a Better Homes and Gardens recipe. Like many of you who like to cook, I subscribe to several online sites. This one caught my attention and I’m here to report that it is easy, delicious, and heats up well for those two day later servings!

I’m giving you the ingredients I used because the fun is in the tweaking in my kitchen.

  1. Lightly spray a 9 x 12 casserole dish.
  2. In a large bowl stir together cream cheese and salsa until combined. Add the chicken, Rotel, onion, cilantro, garlic, and cumin. Stir until combined.
  3. Layer half of the crushed tortilla chips in the bottom of the casserole dish. Top with half of the shredded cheese.
  4. Add the chicken mixture, then top with the remaining tortilla chips and grated cheese.
  5. Cook at 350 degrees for 30 – 40 minutes.

I served this casserole with some chopped lettuce, chopped tomato, additional salsa, and a few dollops of sour cream.

It was easy and delicious and just as good for leftovers. I’m glad I tried this recipe. I would definitely make it again.
