Burritos from leftovers. Yum!

I was very excited to create some delicious burritos from leftovers. First of all, I am NOT the Mexican chef in this family. That title belongs to my husband. Second, I am NOT the one who traditionally creates an amazing dish from leftovers. Again, that is my husband’s department.

We spend so much time in our busy lives trying to answer the question, “What’s for dinner?” Maybe the answer lies in the containers of leftovers in our own refrigerator.

As I scavenged through the fridge shelves, I spied a container of spaghetti sauce and another container of chili. Both of these were homemade and had been served earlier in the week. There was just enough left of both dishes that I didn’t want to throw them out. Neither servings were enough for a complete meal. That’s when a lightbulb went off in my head. By combining the two and adding a few ingredients, I created a recipe for burritos.

My husband loved it and it turned out way better than I could have imagined, if I do say so myself:)

As a bonus, it was easy and delicious.

Ingredients:

1 cup of chili

1 cup of spaghetti sauce

1/3 cup chopped onion

1 heaping Tbls of chopped garlic

1/8 tsp of cilantro

1/8 tsp of oregano

1/8 tsp of cumin

A dash of smoked paprika

flour tortillas

chopped lettuce and tomato

Shredded Colby Jack or cheddar cheese

sour cream

salsa

Directions:

Add the chili, spaghetti sauce, onion, garlic, and seasonings to a black iron skillet and heat until bubbling. Add a little water if it’s too thick.

Warm the flour tortillas. Spoon the desired amount of filling on the tortilla. Sprinkle the grated cheese over the filling. Fold in the ends and roll up the tortilla. Heat oven to 350 and warm for about 15 minutes.

To serve, sprinkle the top with chopped lettuce and tomato. Add salsa and sour cream as desired.

I served the burritos with refried beans topped with melted Colby Jack cheese. There were easy and delicious.
