Does your family love a good salad? What if I told you there is a salad that checks off all the boxes…as in chicken, fruit, nuts, lettuce, onion, and celery?
I’ve been making this for so many years, I’ve forgotten where the recipe came from or if there ever was an actual recipe. Although, my husband is a meat and three guy, he often requests this salad if that tells you anything.
Best of all, many of the ingredients you may already have on hand and other than some chopping and prep time, it’s pretty easy and delicious!
I’m giving you the ingredients for a large bowl of this deliciousness but I often just make two individual servings since I’m only preparing for myself and my husband.
Ingredients:
1 head of iceberg lettuce chopped in bite sized pieces (you could also mix in some butter and/or romaine lettuce)
2 stalks of celery chopped fine
1 large granny smith apple chopped in bite size chunks
2 oz. of raisins
1/3 cup of chopped pecans
1/3 cup chopped red or green onion
3 to 4 chicken tenders (fried or grilled) cut into bite sized pieces
Directions:
Prepare and mix all ingredients in large bowl except for chicken. Let the cooked chicken cool before adding to top of salad.
Serve with your favorite dressing. Honey mustard is what we prefer because it combines well will all the flavors in this salad. You can also add some seasoned croutons.
It’s very tasty and very filling, sort of like a meal in a bowl.
