Apparently we are now comedians in my kitchen. My husband and I laughingly refer to that room occasionally as the Dishing Up Memories test kitchen. Sometimes when he texts me on his lunch break and asks what I’m doing, my response is, “Experimenting in the test kitchen.”
He loves dessert. I do too but I can also take it or leave it only because I would prefer to fill up on some good homegrown veggies and such, especially this time of year. But he is always requesting dessert and somehow I crafted a winner, at least in my favorite “taste testers” opinion.
I had been thinking for awhile about making a dessert with some of our favorite flavors including strawberries, chocolate, and ice cream. My concoction was a hit! Better still, there was no cooking required and the prep time was minimal.
So I had to come up with a name for this creation and settled on Berry Chocolate Delight. And that it is!
Ingredients:
This is based on dessert for two but you could easily increase to accommodate a larger family or guests.
- 6 Oreos, chocolate graham crackers, or any chocolate or chocolate creme-filled cookie.
- 1/3 stick of butter
- One container of frozen strawberries with juice, thawed.
- Vanilla ice cream (I used Tillamook because it is off-the-chain delicious but use what you prefer or have on hand)
- Whipped cream (optional)
- 2 or more ramekins depending on how many you are serving
Directions:
-Crush Oreos or other chocolate wafers or cookies in food processor.
-Melt butter and add to crushed cookies. Mix well.
-Press the mixture in bottom and up the sides of the ramekins, reserving a Tbls or two for topping.
-Add two scoops of vanilla ice cream.
-Cover with the amount of thawed strawberries in juice as desired.
-Sprinkle the remaining crushed cookie and butter mixture over top and serve.
Of course, my husband requested whipped cream to top his off. Then he got to thinking that some chocolate syrup drizzled over the top would be a great addition. I drew the line on that but he may or may not have gone behind my back and added the syrup.
However you want to try it, this is a great end of summer refreshing, delicious dessert to cap off a cookout or for any meal.
