My favorite peach crisp

It’s been almost 50 years since The Allman Brothers Band released Eat a Peach, the stunner that brought listeners some of the band’s most popular material. Released on February 12, 1972, and certified gold two months later, Eat a Peach paid tribute in many ways to guitarist Duane Allman, who passed away in a motorcycle accident.

Duane once said, “Every time I’m in Georgia, I eat a peach for peace.” The group trimmed Duane’s quote to Eat a Peach, and an iconic Southern album found its name.

Almost 50 years ago, eh? Not to make you feel old or anything. But you are never too old to listen to Georgia’s own Allman Brothers or to eat a peach or two or more. After all, we are the Peach State.

Speaking of longevity, Jaemor Farm has been around for generations. You want peaches, they got ’em, and strawberries, watermelon, homemade ice cream, peanuts, honey, tomatoes, and plenty of other fresh fruits and veggies.

I was stunned at the number of varieties of peaches available from Jaemor.

“We have around 40 varieties that are available from June through September,” according to Jeremy Echols, Jaemor’s so-called peach variety expert.

Echols knows a thing or two about peaches or any other produce. His great, great grandfather started the farm in 1912. Stay tuned for an update from Now Habersham about Jaemor’s Peach Festival which still may be on for the last week of July or the first of August.

Many peach goodies can be sampled at Jaemor including homemade peach ice cream, peach fried pies, and more. It inspires me to share with you one of my favorite peach recipes, Peach Crisp.

Ingredients:

Crumb topping

  • 1/2 cup all-purpose flour
  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup light brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • dash of ground nutmeg
  • dash of salt
  • 1/3 cup cold unsalted butter, diced into small chunks

Peach filling

  • 3 1/2 pounds fresh peaches (about 6-8) peeled, cored, and sliced about 3/4in thick
  • 1/4 cup granulated sugar
  • 2 Tablespoons all-purpose flour
  • 2 teaspoons lemon juice
  • 1/2 teaspoon vanilla extract
  • dash of salt
  • dash of cinnamon

Instructions:

  • Add the sliced peaches to a medium-size bowl.
  •  Add 1/4 cup sugar and toss to coat.
  • Allow peaches to sit for about 20 minutes, to allow the sugar to pull some of the juice out of them.
  • Meanwhile, make the crumb topping by combining all ingredients.
  • Cut in the butter with a pastry blender or fork until the mixture resembles small crumbs. Refrigerate the mixture until ready to use.
  • Preheat oven to 375 degrees F.
  • Drain the peaches, reserving the peach juice, and placing the peaches in a large bowl.
  • Measure out 1/4 cup of the peach juice and add it to a small bowl (you can discard the rest, or drink it because it’s delicious!).
  • Stir in the flour, lemon juice, vanilla, salt, and cinnamon.
  • Pour mixture over peaches and toss to combine.
  • Pour peaches into an 8×8” or similar size dish.
  • Sprinkle crumb topping evenly over the top.
  • Bake for 30-35 minutes or until golden brown and the top is set.
  • Remove from oven and allow to cool for at least 10 minutes before serving.
  • Serve with vanilla ice cream, if desired.

Peach Crisp is an easy, delicious, refreshing dessert any time of the year but especially when the temperatures heat up and you plop a scoop of vanilla ice cream on top.
