Blueberry Muffins

When I think of muffins, it brings back a song I learned in kindergarten, The Muffin Man. Do you remember?

Do you know the muffin man,
The muffin man, the muffin man.
Do you know the muffin man,
Who lives on Drury Lane?

The song or rhyme was written in 1820 in England. At the time fresh foods, including muffins, were delivered door-to-door by a muffin man.

The rhyme appears to have spread to other countries in the mid-nineteenth century, particularly the US and the Netherlands.

I’ve been waiting but no muffin man has delivered any muffins to my house so I think I’ll turn to my niece, Jennifer’s recipe for blueberry muffins. They are great for breakfast, lunch, a snack, or dessert. Plus, your kitchen will smell divine while they are baking!

Ingredients:

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp. salt
  • 2 Tbls. flour
  • 1 and ½ cups blueberries
  • ¼ cup sugar
  • 2 Tbls. butter, diced
  • 2 eggs
  • 1 tsp. vanilla
  • ½ cup milk
  • ½ cup brown sugar
  • ¾ cup sugar
  • 3 scrapes lemon zest

Directions:

Preheat oven to 375 degrees. Prepare muffin pan with liners or spray.

Combine 2 c flour, 2 t baking powder, and ½ t salt in a medium bowl. In a small bowl, sprinkle 1-2T flour over blueberries, toss, set aside.

In a large bowl, beat ½ c butter with ¾ c sugar until light and fluffy. Beat in eggs, stir in vanilla, and zest. Fold in dry ingredients alternately with milk. Fold in blueberries. Spoon into prepared muffin cups.

Bake 25-30 minutes or until a toothpick comes out clean.
