We love Mexican food at our house! Personally, I could eat it at least twice a week. We have a favorite Mexican restaurant but, sadly, haven’t felt comfortable dining out in quite some time. No worries. I have an easy chicken fajita recipe and my husband makes the BEST Mexican rice I’ve ever tasted, anywhere! He also whips up a batch of refried beans and voilà, it’s a Mexican feast.
It’s also a great alternative in between the rich food of Thanksgiving and the repeat of many of those rich dishes for Christmas. I am making myself hungry just writing about this.
The recipe came to me by way of a former co-worker and good friend. I think of her every time I make it.
Ingredients for chicken fajitas:
2 chicken breasts will make about 5 to 6 fajitas (use more chicken depending on how many people you are serving)
1 packet of taco seasoning mix
1 packet of ranch dressing mix
Chicken broth
Flour tortillas
Chopped lettuce, chopped tomato, sour cream, salsa and/or queso sauce for toppings
Put chicken in a crock pot. Empty the packet of taco seasoning and ranch mix on chicken. Add enough chicken broth to cover. Turn the crockpot on low for about 5 hours. When the chicken is done, you should be able to put it on a plate or bowl and easily shred for making the fajitas.
Heat the flour tortillas. Add the shredded chicken and the toppings you desire.
Ingredients for Bobby’s mexican rice:
1 cup white rice
2 cups water or chicken stock
1 slice bacon, cooked and crumbled
1/2 cup diced onions
1 small can of steamed southwestern style corn
4 tbls. medium salsa
1/4 tsp. garlic powder
1/8 tsp. oregano
1/2 tsp. chili powder
1/2 tsp. cumin
Cook bacon in medium saucepan. Crumble bacon and add diced onions until browned slightly. Add rice and water or chicken stock to saucepan. Add all other ingredients. Bring to boil then simmer for 20 minutes.
Refried beans ingredients:
1 can of pinto beans
1/8 tsp. garlic powder
1/8 tsp. cumin
1/8 tsp. chili powder
Grated colby jack, cheddar, or Mexican blend cheese
Favorite hot sauce
Heat beans and spices. Mash to desired consistency. Add cheese, hot sauce or other toppings.
And there you have it, an easy Mexican feast fit for a Don or Doña. Delicioso!
